Hey everyone! This is the recipe to my little vanilla cupcakes with piped colourful buttercream and sprinkles. The recipe was inspired by Tanya Burr’s star sprinkled vanilla cupcakes. These are so delicious and look lovely to give to guests!
- 50g butter
- 180g caster sugar
- 1 egg
- 160g plain flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 160g milk
Preheat the oven to 180 degrees and line the cupcake/muffin tray with paper cases.
In a bowl, cream together the butter and sugar until light a fluffy, then mix in the egg and vanilla extract.
Fold in the flour and baking powder, then slowly add the milk, beating as you go until you have a smooth batter.
Spoon the mixture evenly into the cupcake cases and bake for 15-20 minutes until golden brown on the top and bouncy to touch. Transfer to a wire rack to cool.
- 500g icing sugar
- 250g butter
- 1/2 teaspoon vanilla extract
- A few drops of coloured icing of your choice
To achieve the best buttercream, mix the butter well until it turns lighter in colour before adding the rest of ingredients. Pipe onto the cupcakes and decorate with your preferred sprinkles!
